The Cataplana

The Cataplana is made of two shell like copper dishes, hinged together with two side clamps. The ingredients are placed inside the pan with a little stock and or wine. The Cataplana is clamped, goes on the heat for 10 minutes or so and is then ready to serve direct to the table straight from the pan. Think wok/pressure cooker. Impressive, dramatic, bursting with colour, flavour and aroma as you open the two halves of the finished Cataplana!
