Cassia bark is often sold as cinnamon as they share a similar aroma and appearance. However, you can easily tell the difference when the two are side by side – both in texture and aroma. Both are barks, but cinnamon is flaky and soft, whereas cassia is a thicker single roll, and hard. You can break cinnamon with much more ease. Cassia has a complex aroma with a bitter finish, whereas cinnamon is sweet and warm.
